    Mix the flour, butter, egg yellow, water and salt into a smooth dough. Then cover the dough and leave to rest in the fridge for approx. 30 mins. Meanwhile, preheat the oven to 180 degrees top and bottom heat.

    Grease the form with a little butter. Roll out the dough with a rolling pin and place in the form. Note: The edge of the pastry dough should be approx. 3 cm high. Prick the pastry base several times with a fork and pre-bake in the oven for 10 minutes without the filling.

    Cut the Egetürk pastirma into thin strips and fry briefly in a little oil. Leave to cool for 2 – 3 minutes. Mix with the crème fraîche and eggs. Flavour the mixture with salt and pepper.

    Pour the pastirma mixture onto the pre-baked pastry and finish baking in the oven for approx. 25 mins. The quiche is a real treat both warm and cold! Afiyet olsun!
