Soaking the tarhana
Place the tarhana powder in a large bowl of room temperature water and let it soak for about 1 hour. Mix the soaked tarhana with 1 liter of water and stir with a spoon. -

Cut the sucuk into cubes and set aside. Place the pan on the heat and melt approx. 45 g butter in it. Add half the amount of cubed sucuk and the tomato purée and cook together. Add the tarhana and water mixture and bring to the boil over a medium heat. Cook the soup for a further 10 minutes over a low heat. -

Fry the sucuk
Fry the sucuk
Fry the remaining amount of sucuk in a separate pan with butter. When the soup is cooked and cooled, divide it into small bowls and sprinkle the sucuk on top. You can decorate them with some green leafy vegetables Your soup is ready to serve!
